Soft Crystal Mooncake

My aunty bring me to AMWAY cooking/baking class today, more exactly is to promote the bread maker machine and the high pressure cooker. My house got the bread maker machine (can be used as oven as well) but we seldom use it. I made bread twice by using that machine and egg tarts with F*fus last time. All the while it is at 冷宫, until recently my kimpo oven the chicken pie at my house.

And today, I use it to make the dough for the 'skin' of soft crystal mooncake! Tada~ below is my masterpiece....I do not colouring and they do not look nice but luckily the taste still ok. I thought I failed because too gummy and I do not have the measure to measure the flour and sugar weight. I agak-agak only and I used the jelly tray to make the macam-macam patterns. hehe. =P



The recipe:
250g soft cooked glutinous flour
60g shortening
180-200g icing sugar
150-180ml water
Mix all to make a soft dough
Add colouring and flavour (red bean)
Just to mention, by using 2 bread maker machine and 2 high pressure cooker, they are able to cook/make as below in just 1 hour.
  1. 油饭 (around 15 mins)
  2. Laksa (1 hour)
  3. Kaya (30 mins)
  4. Ongol-ongol (15mins)
  5. Mexico Bun
  6. Red Bean Bun
  7. Soft Crystal Mooncake
  8. Mee Ku
I will try to make Mexico Bun next time. Stay tuned~
